      通过采用定量灌胃的方式研究过度煎炸油(DFEO)的摄入对大鼠肝脏损伤的影响及其机理。研究发现:干预6周后,DFEO组肝脏指数显著下降(P<0.05),血清中谷丙转氨酶(ALT)、谷草转氨酶(AST)水平显著升高(P<0.01)。肝组织切片观察发现,DFEO组出现大量脂肪空泡,肝窦扩张,肝细胞界限不清,局部腺体出现炎性细胞浸润。RT-PCR结果表明:连续食用过度煎炸油脂会导致大鼠肝脏组织Gsta2、Gsta3、Gclc、Gclm基因显著下调(P<0.01)。结论:过度煎炸油脂中的含大量毒性物质,破环肝细胞正常的组织形态,长期摄入会破坏正常的基因表达,影响正常的生命活动。
英文摘要:
      To study the effects of the consumption of deep-fried edible oil (DFEO) on liver injury in rats and its mechanism, this experiment was done through controlling the intake of DFEO. The results showed that after the intervention of 6 weeks, in the DFEO group, the serum levels of aspartate transaminase (ALT), aspartate aminotransferase (AST) levels are significantly increased (P < 0.01) and liver index decreased significantly. Meanwhile, tissue sections of liver were observed, which showed that a large number of fat vacuoles, liver sinusoidal expansion in the DFEO group, and liver cell boundaries were not clear. What’s more, local glands appeared inflammatory cell infiltration. The results of RT-PCR showed that after the consumption of deep-fried edible oil 6 weeks that will lead to some genes, such as Gsta2、Gsta3、Gclc、Gclm, significantly decreased (P < 0.01). Conclusion: the results indicating that deep-fried edible oils rich in large amounts of toxic substances will cause serious damage to the liver tissue after ingestion of animal body, broken liver cell morphology, and long-term intake will damage the normal gene expression, affecting the normal life activities.
