    目的 采用太赫兹(terahertz,THz)光谱技术鉴定蜂蜜的真伪。方法 采用稳定同位素比值质谱(IRMS)仪对不同蜂蜜样品进行检测,其结果作为太赫兹光谱检测的参考,通过比对2种检测方法的结果,来验证太赫兹光谱检测的样品要求和分析条件。结果 液态蜂蜜没有明显的吸收峰,但不同样品的折射率存在明显差异,且液态蜂蜜中含有一定的水,水分质量分数偏高的时候会影响样品的折射率,从而导致结果误判。将液态蜂蜜中的水分通过冷冻干燥去除,再进行太赫兹衰减全反射检测,结果表明冻干蜂蜜样品仍然没有明显的吸收峰,但冻干样品的折射率差异明显,可分为2类:一类样本折射率波动较小,平均折射率范围为2.04~2.29;另一类样本折射率波动较大,平均折射率范围为0.86~2.22。结论 2种检测方法的数据分析结果一致,表明太赫兹光谱可以用于蜂蜜样品的真伪鉴定。

    Abstract:

    Objective This study aims to identify honey authenticity by terahertz (THz) spectroscopy.Method Different honey samples were analyzed by stable isotope ratio mass spectrometry (IRMS), and the results served as a reference for terahertz spectroscopy. The sample requirements and analytical conditions of terahertz spectroscopy were verified by comparing the results of these two methods.Result Liquid honey samples exhibited no discernible absorption peaks. However, significant differences in refractive index were observed among samples. The presence of water in liquid honey, particularly at high levels, affected the refractive index, potentially leading to misjudgment. After removal of water from liquid honey via freeze-drying, terahertz attenuated total reflection was employed for identification. The freeze-dried honey samples still showed no discernible absorption peaks but exhibited distinct refractive index variations, being grouped into two categories: one with minor refractive index fluctuations and average values ranging from 2.04 to 2.29, and the other with considerable fluctuations and average values ranging from 1.03 to 2.22.Conclusion Consistent results from both analytical methods demonstrate that terahertz spectroscopy can be employed for authenticity identification of honey samples.
