    目的】 研究鲜切香菜的最佳消毒方法。【方法】采用醋酸和氯化钠作为消毒剂,先进行单因素试验,再根据单因素试验结果进行正交试验,4 ℃贮存2 d后测定试验指标:菌落总数、叶绿素质量分数、 硬度、色泽、风味物质和感官品质。 【结果】1 g/L的醋酸和3 g/L的氯化钠复合消毒剂消毒5 min效果最佳,鲜切香菜于4 ℃贮藏,货架期可达7 d,感官评分为7.72分,菌落总数的对数为5.86,比150 mg/L二氧化氯或200 mg/L次氯酸钠消毒的鲜切香菜货架期延2 d。 【结论】 1 g/L的醋酸和3 g/L的氯化钠复合消毒剂消毒5 min是一种处理鲜切香菜高效安全的消毒方法。该研究不仅能够有效提升鲜切香菜品质并延长货架期,还有助于减少工厂水资源浪费,节省生产成本,为其商业化应用提供理论依据。

    Abstract:

    [Objective] This study aims to develop an effective sterilization method for fresh-cut coriander. [Method]Acetic acid and sodium chloride were used as sanitizers. Single-factor experiments were first conducted, followed by the orthogonal experiment based on the results of single-factor experiments. After storage at 4 ℃ for 2 days, the aerobic plate count, chlorophyll mass fraction, hardness, color, flavor substances, and sensory quality were determined. [Result]The treatment with 1 g/L acetic acid and 3 g/L sodium chloride for 5 min achieved the best sterilization effect. Under refrigerated storage (at 4 ℃), coriander treated with this compound sanitizer maintained a shelf life of 7 days, with a sensory score of 7.72 and a total bacterial count of 5.86. This treatment extended the shelf life by 2 days compared with the treatment using 150 mg/L chlorine dioxide or 200 mg/L sodium hypochlorite. [Conclusion]The compound sanitizer composed of 1 g/L acetic acid and 3 g/L sodium chloride is an effective and safe alternative for sterilizing fresh-cut coriander. This method not only improves the quality and prolongs the shelf life of coriander but also reduces water consumption and production costs, providing a theoretical foundation for commercial application.
