    【目的】提高玉米资源的利用率并缓解饲料资源紧张。【方法】研究评价了副干酪乳酪杆菌ZB-1(ZB-1)、副干酪乳酪杆菌DY-2(DY-2)、鼠李糖乳酪杆菌DY-4(DY-4)这3株乳酸菌的肠道定植能力、耐受性及抑菌能力,筛选出最适发酵玉米皮的菌株,并对其发酵工艺进行优化。【结果】ZB-1在肠道定植能力和抑菌性方面优于DY-2和DY-4,其抑菌机制可能是由酸性环境介导的有机酸与某些蛋白质类抗菌物质共同驱动。通过工艺优化,确定ZB-1最佳发酵条件为:玉米皮经体积分数6%纤维素酶(酶解时料液比4 g:1 mL)酶解处理24 h后,再添加质量分数2% 的NaHCO3进行碱处理,ZB-1菌株的接种体积分数5%,体积分数3%的糖蜜和1 350 U/g碱性蛋白酶,发酵原料水分质量分数控制在50%,发酵温度为37 ℃,发酵时间为48 h。在此条件下,发酵后玉米皮的有机酸质量分数可达3.23%,小肽质量分数提高至50.2 mg/g,中性洗涤纤维(NDF)和酸性洗涤纤维(ADF)质量分数分别降低至63.72%和15.82%。【结论】发酵玉米皮新工艺不仅能够提高小肽和有机酸质量分数,也可以降低其NDF和ADF质量分数,为玉米皮的高效生物转化及乳酸菌发酵其他饼粕类饲料原料提供了依据。

    Abstract:

    [Objective]This study aims to improve the utilization of maize resources and address the shortage of feed resources.[Method]The intestinal colonization capacity, tolerance, and antibacterial properties of three Lactobacillus strains, Lactobacillus paracasei ZB-1 (ZB-1), L. paracasei DY-2 (DY-2), and L. rhamnosus DY-4 (DY-4) were evaluated. The most suitable strain for fermenting cornhusks was identified, and its fermentation process was optimized.[Result]ZB-1 exhibited higher intestinal colonization ability and antibacterial properties than DY-2 and DY-4. The antibacterial mechanism of ZB-1 was likely driven by the action of organic acids in an acidic environment and certain protein-based antimicrobial substances. The fermentation conditions for ZB-1 were optimized as follows: hydrolysis of corn husks with cellulase at a volume fraction of 6% (solid-liquid ratio of 4 g∶1 mL during enzymatic hydrolysis) for 24 h, followed by an alkaline treatment with NaHCO3 at a mass fraction of 2%, ZB-1 inoculation volume fraction of 5%, molasses addition at a volume fraction of 3%, alkaline protease of 1 350 U/g, moisture content of the fermentation material controlled at a mass fraction of 50%, and fermentation at 37 ℃ for 48 h. Under these conditions, the mass fraction of organic acids in the fermented corn husks reached 3.23%, and the mass fraction of small peptides increased to 50.2 mg/g. Additionally, the mass fractions of neutral detergent fiber (NDF) and acidic detergent fiber (ADF) decreased to 63.72% and 15.82%, respectively.[Conclusion]This novel fermentation process for corn husks not only enhances the mass fractions of small peptides and organic acids but also decreases the mass fractions of NDF and ADF. The findings of this study offer significant reference value for the efficient biotransformation of corn husks and the fermentation of other cake and meal feed materials with Lactobacillus.
