    摘要:

    以螺旋藻为主要壁材,以亚麻油为芯材,通过喷雾干燥技术制备微胶囊。考察了喷雾干燥工艺参数及进料配方对微胶囊产品质量的影响,筛选出明胶和麦芽糊精作为辅助壁材,并对微胶囊产品的性能进行了一系列表征。研究结果表明:单一螺旋藻壁材包埋亚麻油微胶囊的最佳制备条件为空气压力3 bar,空气流速4.3 m/s,进口温度190 ℃,进料流量900 mL/h,进料质量分数10%,芯壁材质量比1∶3,在此条件下微胶囊包埋率为48.85%。与单一螺旋藻壁材相比,复合壁材微胶囊具备更高的包埋率,以螺旋藻为主壁材,以明胶和麦芽糊精为辅助壁材制备的亚麻油微胶囊包埋率可提升至75.36%。通过表征分析及性能检测可知,喷雾干燥制备的螺旋藻微胶囊表面光滑,颗粒圆、尺寸小,平均粒径为7.20 ?滋m,且抗氧化性与市售螺旋藻粉相比提高47.7%。螺旋藻与明胶、麦芽糊精复配制得的微胶囊具有良好的热稳定性和储存稳定性,当温度由40 ℃升至200 ℃时,复合壁材微胶囊的质量保持率为82.96%;复合壁材微胶囊能有效延缓芯材亚麻油的氧化进程,且室温储存30 d后微胶囊芯材保留率仍维持在80%以上。

    Abstract:

    The microencapsulation of flaxseed oil using spirulina as main wall material was prepared by spray drying. The effects of spray drying process parameters and formula on the microencapsulated powders were investigated in this study. Gelatin and maltodextrin were selected as the supplementary wall materials. The characteristics of the powders were studied. The optimum technological parameters for microencapsulation of flaxseed oil using spirulina by spray drying were as follows:3 bar of air pressure,4.3 m/s of fan speed,190 ℃ of inter temperature,900 mL/h of feed speed,10% of feed concentration,and 1∶3 of the weight ratio of core material to wall material. The microencapsulation efficiency was thus improved to 48.85 %. The compound wall materials provided higher microencapsulation efficiency compared with the single wall material. The microencapsulation efficiency increased to over 75% with 5% spirulina,10% gelatin and 5% maltodextrin. The results indicated that the powders encapsulated by spirulina possessed small particle size and smooth surface with the average particle diameter of 7.20 ?滋m. Moreover,the oxidation resistance of microcapsules was increased by 47.7%,comparing with commercially available spirulina powders. Flaxseed oil microencapsulated by compound wall materials of spirulina,gelatin and maltodextrin had good thermal stability and storage stability. The microencapsulation retention reached to 82.96% when temperature increased from 40 ℃ to 200 ℃. The lipid oxidation of flaxseed oil could be effectively prevented by compound wall materials,which showed a higher retention rate of 80% for core material after 30 days storage at room temperature.
