    Abstract:

    The increase of nanoparticles in food enhances the exposure possibility of human to nanoparticles by oral ingestion. Therefore, it is very important to accurately assess the safety of orally ingested nanoparticles. This review summarized the effects of the interaction of common nanoparticles in food with food matrices and gastrointestinal tract on the physicochemical properties and biological responses of nanoparticles, providing a reference for an accurate safety assessment of nanoparticles.
