Abstract:本文对龙虾片的蒸煮挤压工艺进行了探索性的研究,发现在挤压机筒温度T_b=90℃,挤压螺杆旋转速度V_s=78r/min,绝对干料进料速度V_F=150g/min~(-1)以及物料水分含量M_c=50%的工艺条下,可以生产出品质优良的龙虾片。本文还就龙虾片的油炸膨化机理进行了讨论。
Abstract:用硝酸根电极同时测定肉制品中硝酸盐和亚硝酸盐含量。以0.1mol/l硫酸钠作为总离子强度调节剂,在pH3.4±0.1,硝酸根电极在硝酸钠4.0—30μg/ml浓度范围内呈良好的能斯特应答。一次标准加入法定量。在酸性条件下,用过氧化氢氧化提取液中NO_2~-,测得NO_3~-总量,然后用差减法求得NO_2~-含量。用本法测定了13种市售肉制品中硝酸盐和亚硝酸盐含量。变异系数2.31%—9.83%,回收率95.0%—108.4%。用NO_3~-和镉柱还原法,NO_2~-和萘乙二胺比色法进行了对照,结果无显著性差异(α0.05)。

Abstract:从土壤中筛选到一能分泌碱性高温淀粉酶的芽孢杆菌属菌株。用质粒pTB522作载体,该淀粉酶基因(amyA)被克隆并在枯草芽孢杆菌ANA-1中得到表达。又通过亚克隆,得到含酶基因的更小重组质粒pTBX32(14.6kb)。携带该重组质粒的枯草芽孢杆菌ANA-1分泌的淀粉酶的特性与供体菌的相同。该酶作用最佳pH为8.5、最适温度为75℃,但在65℃,pH8.5条件下处理1h,该酶活性不降低。通过硫铵沉淀、热处理、DEAE——纤维素色谱和亲和色谱等分离技术,从培养液中部分纯化了该酶,其分子量估计为56000。
